this is one of my favourite things 2 make….. they are soo scrummmmmy :D
125g butter, softened
3/4 c light brown sugar, firmly packed
1 egg
1 t vanilla extract
1 c plain flour
1/4 c s.r flour
1/3 c cocoa powder
1/2 t bi carb soda
90g dark eating chocolate, chopped coarsely
125g frozen raspberries
- Preheat oven to 180C line oven trays with baking paper.
- Beat butter, sugar, egg and extract in small bowl with electric mixer until combined. Stir in flours, cocoa and soda, in 2 batches, then stir in choc and raspberries.
- Drop T’s of mixture about 5 cm apart onto trays, flatten slightly. Bake cookies about 12 minutes. Stand cookies on trays 5 mins before moving them to a wire rack to cool.
Prep time + Cook time: 35mins
Makes: 24
Note: You can use different colour chocolates with different berries if you like.
Store cookies in air tight container in the fridge for upto a week (if they last that long) ;)
